Roasted Peanut Rolls - Groundnut Rolls - Shengdana Ladoo

The shortest recipe but the healthiest one. These peanut rolls will not only treat you with delight but will make you popular among kids too !!

Ingredients:
3/4 Cup Roasted groundnut powder
4 tsp Clarified butter/Ghee
2 tbsp Jaggery

Recipe:
1. Mix jaggery, roasted ground nut powder and clarified butter together. Grind them for 3-4 minutes.
2. Roll them into small rolls and our dish is ready.

Benefits:
1. Can be made in just 2 minutes.
2. Very easy and very delicious.
3. one of the dishes made during fasting.

Potato, the most common ingredient in any kitchen. However, this recipe not only is used during fasting in Maharashtra - India, but you can have it during other days too. Enjoy this delicious recipe, which comes from Maharashtra, share it with friends and family, and do let me know your feedback too!

Ingredients:
2  Medium Boiled Potatoes
3 tbsp. Roasted Groundnut Powder
2 tsp. Clarified Butter
1 tsp. Cumin Seeds
2 Green Chilies
Sugar
Salt

Recipe:
Cut the boiled potatoes into small pieces.
Keep your pan on medium heat. Add clarified butter to that.
Once the butter melts, add cumin seeds and green chilies and mix it properly.
Now add potatoes and mix it well. Let it cook for 2 to 3 minutes.
Add roasted groundnut powder and mix it well. Please make sure you gently mix other ingredients with groundnut powder as potatoes are already boiled and we don't want to break them.
Finally add sugar and salt as per taste and our 'Upwas Batata Bhaji' is ready.

Famous dish of Maharashtra at the time of 'Upwas' i.e. Fasting
Can be made very quick

Roasted Groundnut Powder - Shengdana Koot

Roasted Groundnut Powder ( a.k.a Shengdana Koot ) is an essential ingredient in many of the Maharashtrian recipes. This quick recipe / process will help you make it at home, quick and easy. It can be used to make various chutney or even in Sabudana Khichdi.  

Ingredients:
Peanuts - There is no such quantity for peanuts. You can take as much as your pan allows you   to take :) 

Recipe:
1 Take large pan and keep it on low heat.
2 Put all your groundnuts in the pan.
3 Keep stirring the groundnuts just to avoid the burning.  
4 Keep doing the same for 5-8 minutes (This time may very depending upon the quantity of ground nuts). 
5 After few minutes, check whether your groundnuts are roasted properly. To check, just take one ground nut, let it cool for few seconds and if skin comes out easily, then your ground nuts are ready for step number 2.  
6 Next step is to grind the ground nuts. Please make sure to cool the ground nuts at room temperature because if you grind them when they are hot, the powder will become soggy.  
7 After grinding our 'Ground Nut Powder' will be ready.

Sabudana Khichadi - Maharashtrian Recipe

Ingredients:
3 Bowl Soaked Sabudana
1.5 Bowl Roasted Ground Nut Powder
5 Tbsp. Clarified Butter / Ghee
2 tsp. Cumin Seed
2 to 3 Green Chilies
1 tsp. Sugar (or as per taste)
1.5 tsp. Salt or as per taste
For garnishing  Coriander / Cilantro and Grated Coconut

Tip for Sabudana:

Just add the water till all sago in bowl gets filled and soak overnight. 

Recipe:

1. Create Sabudana/Sago mixture by adding all the ingredients together except cumin seeds and green chilies . 
2. Once the butter melts, add cumin seeds and green chilies to that. Let it cook for few minutes. 
3. Now add Sabudana/Sago mixture and mix it properly. 
4. Cover it with lid and let the mixture cook for 4-5 minutes and our 'Sabudana Khichadi' will be ready. 
5. Garnish it with coconut, cilantro and serve it hot with lemon wedge and bowl of yogurt.
