How to make Sheera / Rava Sheera / Suji Halwa / Rava Dessert / Prasadacha Sheera / Indian Sweet

Sheera or Rava Dessert is a very popular item in India and made during any auspicious occasion like Pooja / Marriage and many more.

Ingredients:
1 bowl of rava / sooji
1/2 bowl of clarified butter ( Ghee )
1 bowl of sugar. You can use less if you want it less sweet
2 bowl of water ( generally its twice the amount of sooji )
Almonds or Cashews  and Saffron for garnishing

Recipe:
1. Please pan on medium heat and add the rava. Roast it by stirring for around 4 - 5 minutes. In the meantime, take the water in another pan and keep it to boil.
2. Once the sooji / rava is roasted, it will change its color slightly. Now, slowly add the clarified butter till all the rava is wet. Keep roasting it for another 2- 3 minutes till it starts to give out aroma.
3. Add the boiling water and mix well. The rava / sooji will puff up by absorbing all the water.
4. Add the sugar and mix well. Keep stirring.
5. After about 2 minutes, the sooji will be thick and start to form lumps.
6. Sheera / Rava Dessert is Ready. Add the saffron ( use saffron with warm milk ) and the nuts.
7. Serve hot.

This is one of the most famous and sought after dessert in Maharashtra - India. Popular 
during the summers as that's when you get fresh mangoes, but you can always substitute mangoes with any fruit of your choice.

Ingredients:
3 cups of thick yogurt.
Normally, the process is to take the regular yogurt, pour it on the muslin cloth and then let it drain out the water overnight. However, if you don't have that much preparation time, you can also use plain Greek yogurt.

1 cup of sugar
1 cup of fresh or canned mango pulp
A few crushed pistachios or almonds

Recipe :
1. Add all the ingredients in a big bowl.
2. Whisk this mixture with egg beater or a regular hand whipper
3. Once the consistency is thick, add the nuts and your dessert is ready !

Rawa Ladoo
Diwali and Rava Laddoo are inseparable. This delicious sweet is mouth watering and a popular item with kids too. Its made with semolina, sugar, clarified butter and lots of love :)

Ingredients:
1 Cup Rava/Suji
3/4 Cup Sugar
1/2 Cup Shredded Coconut
1/2 Cup Clarified Butter/Ghee
1/2 tsp Cardamom Powder
1 tbsp Almond Slices
Water: As Required.

Recipe:
1. Keep your pan on medium heat. add rava and clarified butter/ghee to that pan.
2. Stir it continuously for few minutes. 
3. When it starts changing color, add coconut and cook it for another 2-3 minutes.
3. Once it is done. keep it aside.
4. Take thick bottom vessel and add sugar to that. Now add water slowly so that our all sugar is get wets.
5. Keep it stirring continuously for few minutes.
6. Once it starts caramelizing, our sugar water is ready.
7. Now add this hot sugar water in rava mixture.
8. Add  cardamom powder, almond slices and mix it well. Let the mixture cool down completely.
9. Now roll our ladoo's :) and our dish is ready.

Caramelized Sweet Potatoes - Ratalyache Kaap - Maharashtrian Delicacy

An amazing delicacy, frequently enjoyed in Maharashtra - INDIA. Try it out with sweet potatoes, clarified butter and sugar :) Impress your friends and family too !

Ingredients:
2-3 Sweet Potato, sliced in thin circles. Do not remove the skin of the potatoes.
1/4 cup of clarified butter. ( In India its called as Ghee )
Half cup of Sugar. You can use brown sugar too.

Recipe:
1. Keep your pan on medium heat.
2. Add the clarified butter.
3. Once the butter melts, add the potato slices.
4. To check whether the potatoes are cooked, take a spatula and press one of the slice. If it goes through easily, the potatoes are cooked !
5. Now, add the sugar.
6. Still well.
7. Once the sugar melts and caramelizes a little bit, our dish ready !
