Ingredients:
2-3  tsp ghee
1     tsp turmeric powder
2     tsp cumin seeds
1     medium onion - finely chopped
2-3  finely chopped green chilli
2     tsp garam masala
300 gms okra
1     tsp crushed red pepper
3     tsp yogurt
6-7  cashews
salt - as per taste

Recipe:
1. Keep your pan on medium heat.
2. Once pan is hot, add ghee.
3. Once ghee is hot, add cumin seeds and turmeric powder.
4. Add onion, green chili and cook till onion become translucent. 
5. Now add garam masala, okra and mix it well. Let it cook for few minutes.
6. Lastly, add crushed red pepper, yogurt and salt.
7. Garnish it with cashews and serve it hot.

Ingredients:
1        Cup milk
1.5     tsp milk
5-6     Cloves
1        Cardomom
1        tsp Sugar
few strands of saffron 

Recipe:
1. Keep your pan on medium heat.
2. Once pan is hot, add milk, spices.
3. Stir it well. Let the spices gives out aroma. 
4. Bring it to boil. Now add saffron strands.
5. Now add turmeric powder, mix it well. Let the milk come to another boil. 
one more time.
6. Lastly, add sugar. You can also add honey or sweetener (1/4 tsp).
7. Strain and serve hot.

Ingredients:
3    tsp Clarified Butter / Ghee
3    tsp Cumin Seeds
2    tsp Coriander
1    Medium Size Grated Cauliflower
Salt - As per taste

Recipe:
1. Keep your pan on medium heat.
2. Once pan is hot, add clarified butter or ghee.
3. Now add cumin seeds and mix it for few seconds.
4. Add grated cauliflower. Keep the pan on high heat. We want to sear the cauliflower from outside and leave it a bit crunchy,
5. Mix it well and let it cook for few minutes.
6. Now add coriander 
7. Add salt just before serving so that cauliflower does not give out moisture.

Notes:
1. You can also use food processor to grind the cauliflower. Just chop it grainy, do not puree it.

Ingredients:
4    tbsp Butter
1    tsp chopped green chili
1/4 tsp ground black pepper
1/4 tsp garam masala
1/4 tsp Garlic salt
6    Medium sizes eggs
1    tbsp chopped coriander/cilantro
6    tbsp whipping cream or milk

Recipe:
1. Keep your pan on medium heat and add butter.
2. Once butteris melted, add green chili and stir it 30 seconds.
3. Now add black pepper , garam masala, garlic salt and mix it well.
4. Add 6 medium sized eggs and keep stirring it.
5. Once mixture starts releasing from the pan, add whipping cream or milk.
6. Mix it well for couple of minutes and masala scrambled eggs are ready.

Chicken Tikka Recipe
This quick chicken tikka recipe does not need overnight marination or a big list of spices and ingredients. Treat yourself to a very healthy snack or even a meal, paired with lemon or healthy fats like Avocado. Very quick to make, cheap and easy protein snack for all those who are into fitness or want to build muscle. An average chicken breast has around 34 gm of high quality protein.

Ingredients:
1 Diced Chicken Breast 
2 tsp Oil
1 tsp Paprika
1 tsp Garam Masala
1 tsp Garlic salt
1 tsp Ground Black Pepper

Recipe:
1. Take a bowl, add all of the ingredients and mix it well. (add just a tsp of oil)
2. Keep it aside for 15 mins.
3. Keep your pan on high heat and add 1 tsp oil.
4. Once oil is hot, add marinated chicken to it. Stir it for few mins.
5. Cover it with lid and cook it for around 4 mins.
6. Once it is cooked, you can easily cut using spatula.

A recipe which has been handed down from generations. This multi nutritional dish is not 
only mouth watering but soooo easy to make. I'm sure once you try it... it will be a regular item on you menu. Its much better than any fast food.

Ingredients:
2 Cup Jowar Flour
2 Onions
1 tsp Asafoetida
1.5 tsp Turmeric Powder
2 - 3 tsp Red Chili Powder
3/4 Cup Coriander/Cilantro
2-3 tbsp Oil
Water: As required
Salt: As per taste

Recipe:

1. Take jowar flour into large bowl and add all the spices.
2. Now add onions, coriander, oil and salt.
3. Add sufficient amount of water and make soft dough and make small portion out of it.
4. Now take one cotton cloth, soak it into water.
5. Spread it over wooden board. Take one small portion and spread it on cloth by using water to make thalipeeths.
6. Add some oil on pan and put this on it.
7. Cook it from both sides and your dish will be ready.

Benefits:
1. Very healthy as contains ingredients like jowar flour, onions, coriander.cilantro.
2. East and can be made quickly.

Til - Sesame Sweet
This is a traditional Maharashtrian sweet which is prepared using roasted sesame seeds and jaggery. This is eaten during winters as sesame and jaggery help to protect against the harsh cold and offer natural protection.

Ingredients:
2 Cup Roasted Sesame Powder
1/2 Cup Roasted Peanut Powder
1 Cup Jaggery
2 tsp Clarified Butter/Ghee
Coconut Flex For decoration

Recipe:
1. Keep your pan on low heat and add clarified butter/ghee to that.
2. Once ghee melts, add jaggery to the pan.
3. Keep it stirring continuously.Once jaggery is melted completely, take it off the heat.
4. Add both powder and mix it properly.
5. Apply some ghee on plain dish and spread our mixture on it.
6. Now put coconut flex and press it into mixture.
6. Cut the mixture into square pieces and our dish is ready.

Benefits:
1. Popular sweet snack made during Sankranti.
2. Very useful to build immune power against winter.

Baked Vegetables - Fast and Easy Recipe

Who does not love baked vegetables ? With a creamy layer of cheese, this is a loved by all recipe. Do try it at home and do let me know your feedback too.

Ingredients:
3 cups of chopped vegetables. ( mix of peas, carrots, beans, broccoli and more )
2 1/2 cups of milk
4 tablespoon of all purpose flour
1 teaspoon of black pepper
4 tablespoon of butter
1 cup of cheese. You can take different blends too.
Salt as per taste

Recipe:
1. Place pan on medium heat.
2. Add butter. Let it melt and then add all purpose flour.
3. Add chopped garlic.
4. Mix it well, keep stirring.
5. In another pan, boil milk.
6. Once the all purpose flour changes the color slightly, add the boiled milk slowly while stirring. This will ensure no lumps are formed.
7. Add black pepper.
8. Note that no salt has been added yet. We will add salt while baking.
9. Preheat the over for 350' F.
10. Layer the veggies and the white sauce that we just prepared, in a buttered pan. Then top it with cheese.
11. Bake for around 35 mins
12. Serve.

Benefits:
1. Easy to make and provides a good portion of veggies.
2. Cheese makes it a kids favorite !

This quick and easy recipe is not only an all time classic, but hugely popular among kids. You can always change this recipe a bit, by skipping the green chilies / peppers in case its only for the kid party :)

Ingredients:
2 Bread Slices
2 Chopped Green Chilies
3 tbsp Cheddar Cheese
2 Slices Of Mozzarella Cheese
1 tsp Butter

Recipe:

1. Apply butter on bread slices from both sides.
2. Now place one slice on grill.
3. Put mozzarella cheese, green chilies and cheddar cheese.
4. Now cover it with second slice of bread.
5. Roast the sandwich for 4-5 minutes our dish is ready.
6. Serve it hot with tomato ketchup or have it plain.

Benefits:
1. Very quick and easy snack.
2. Health breakfast item as it contains good source of protein.

Karela Magic - BitterGourd - Bitter Melon Recipe

Bitter Gourd - Karela Magic Recipe

Karela is one of the highly beneficial vegetable for the body. It is called a boon in Ayurveda but is one of the most difficult to cook due to its bitterness. As I call it, it is a chef's nightmare and any mothers too !


I wanted to share my mom's recipe with you all so that you can benefit by this gift of mother nature !

Ingredients:
2 Karela's / Bitter gourd cut in slices. Ensure that you remove the seeds.
5-6 cloves of garlic.
7-8 dried red chilies.
1 teaspoon of whole black pepper. You can also use the ground powder.
1 1/2 teaspoon of coriander seeds. ( Dhania Seeds in Hindi )
8-10 green chilies. Vary the quantity per the hotness. ( I prefer spicy though )
2 star anise
Half bowl / 1 cup if grated coconut. Use the fresh one if available.
Half cup of soaked yellow peas ( soak for around 30 minutes)

Tempering:
1/4 teaspoon of asafoetida / Hing Powder
1/4 teaspoon of mustard seeds
1/4 teaspoon of turmeric powder

Recipe:
1. Keep pan on medium heat.
2. Add one teaspoon of vegetable oil.
3. Add 1/4 teaspoon of asafoetida/ hing ( you will get it at any Indian Grocery Store )
4. Add 1/4 teaspoon of turmeric powder and mustard seeds.
5. Add the cut Karela / Bitter Gourd. Mix it well.
6. Add sufficient amount of water. Add till the Karela soaks. Do not cover with lid. Let it cook till water evaporates.
7. Now, we will need make the masala.
8. Begin by dry roasting the spices on medium heat. Do not add the soaked yellow peas yet.
9. Lightly roast the spices. Ensure you stir continuously otherwise there is a possibility that the spices may burn or char.
10. Once the aroma of roasted spices leaves the pan, add 3/4 cup of water and grind this mixture to a fine paste.
11. Now add salt ( as per taste ) to the Karela. Mix it well.
12. Add the soaked Yellow Peas.
13. Add the ground masala.
14. Karela Magic Ready ! Garnish it with Coriander. Serve it hot with Roti or Rice.

Benefits:
1. Extremely healthy due to the Karela / Bitter Gourd.
2. Kids will love it too as all the bitterness is masked by the masala.




Potato Rasoti - Potato Cutlets - Veg Cutlet

Potato Rasoti, Potato Cutlets are one of the quick and healthy snacks that you can make with very simple and easy to find ingredients. Its not a recipe of specific region like Indian or Mexican, American etc, and hence you can alter the taste as per your ingredients.But ensure you have potatoes or sweet potatoes as that's what the recipe is about !

Ingredients:
2 boiled potatoes, mashed.
1 teaspoon ginger finely grated.
2-3 teaspoon coriander or cilantro. You can also use parsley.
2-3 green chilies / peppers finely chopped. Alter the quantity as per the hotness.
1 teaspoon of fresh lime juice.
Salt as per taste.

Recipe:
1. Mix all ingredients together in a bowl.
2. Once all the ingredients are mixed, make small balls / patties.
3. Place them on hot grill or you can even put them in hot pan.
4. Drizzle a little bit if vegetable oil or olive oil. You can also use butter ( light butter for less calories :)
5. Once they are golden brown on both sides, remove them on a paper napkin to absorb excess oil.
6. Serve hot with ketchup or chutney. You can also place them in buns and have a quick burger !
