Rawa Ladoo
Diwali and Rava Laddoo are inseparable. This delicious sweet is mouth watering and a popular item with kids too. Its made with semolina, sugar, clarified butter and lots of love :)

Ingredients:
1 Cup Rava/Suji
3/4 Cup Sugar
1/2 Cup Shredded Coconut
1/2 Cup Clarified Butter/Ghee
1/2 tsp Cardamom Powder
1 tbsp Almond Slices
Water: As Required.

Recipe:
1. Keep your pan on medium heat. add rava and clarified butter/ghee to that pan.
2. Stir it continuously for few minutes. 
3. When it starts changing color, add coconut and cook it for another 2-3 minutes.
3. Once it is done. keep it aside.
4. Take thick bottom vessel and add sugar to that. Now add water slowly so that our all sugar is get wets.
5. Keep it stirring continuously for few minutes.
6. Once it starts caramelizing, our sugar water is ready.
7. Now add this hot sugar water in rava mixture.
8. Add  cardamom powder, almond slices and mix it well. Let the mixture cool down completely.
9. Now roll our ladoo's :) and our dish is ready.

How to make bread ? Well, here is a better version of bread. This spicy bread is an excellent home made bread recipe with spices, garlic, rosemary, olive oil and lots of love !

Ingredients:
8gms of yeast + 1 cup of water and 1 tsp of sugar. (keep this mixture for around 30 mins)
3 cups of whole what flour
1 1/2 tsp of oregano
2 tsp of black pepper
1 1/2 tsp of cumin seeds
3-4 garlic cloves, finely chopped
1 tsp of rosemary
3 tbsp of sesame seeds
4-5 green chilies, per hotness
half cup of olive oil
1 tbsp of coriander / cilantro

Recipe:
1. Mix all the ingredients together to make a dough. Add water while you knead the dough for proper wetness.
2.Once the dough is ready, cover it with wet towel and keep aside for around 3 hours to rise.
3. The dough will double in size.
4. Add a little all purpose flour ( dust it ) and make small balls.
5. Place them separately on a plate and keep aside for another 30 mins, to let them rise.
6. Bake in oven for 20 mins, at 350'f.
7. Serve hot or cold, with soup !

Ingredients:
200 gm Paneer
1 inch Ginger
2-3 Cloves Of Garlic 
1 tsp Coriander Powder
3/4 tsp Garam Masala
3/4 tsp Red Chili Powder
4-5 Dried Red Chilies
1/2 Green Capsicum/Green Bell Pepper
1.5 Onion
1 Tomato
1/4 Cup of cream
1 tbsp Butter
1/2 tsp Oil
1/4 tsp Asafoetida
3/4 tsp Turmeric Powder
Coriander/Cilantro: For Garnishing
Salt: As Per Taste
Water: As Required

Recipe:
1. Keep our pan on medium heat and add oil to that.
2. Once the oil is little bit hot, add butter to the pan.
3. Now add red chilies, ginger, garlic and mix it well. Let it cook for 1-2 minutes.
4. Add onions and let it cook till onions become transparent.
5. Now add tomatoes and let it cook for few more minutes.
6. Now add all the spices and mix it proerly and cook for another 1-2 minutes.
6. Switch off the heat and let the mixture cool down to room temperature.
7. Once the mixture is cool down, just grind it together to make puree.
8. Keep other pan on gas and add little bit oil to that.
9. Once oil is hot, add asafoetida and turmeric powder to that.
10. Pour our puree into pan followed by paneer and mix it well. (Add water if required)
11. Let is cook for few more minutes and then add green pepper.
12. Finally add cream and salt, gently mix it. 
13. Decorate it with coriander and our dish is ready.

Ingredients:
3 cups of boiled moong daal
1 big tomato, finely chopped
3-4 green chillies
2-3 gloves of garlic, finely chopped
1/4 tsp mustard seeds
1/4 tsp cumin seeds
1/4 tsp asafoetida / hing
1 tbsp goda masala ( maharashtrian masala )
1/4 tsp red chillies powder
1/4 tsp turmeric powder
coriander for garnishing

Recipe:
1. Keep the pan on medium heat.
2. Add 2 tsp of oil. Once oil is hot, add the spices, followed by garlic and green chillies.
3. Mix well and cook for around 1 minute.
4. Add tomatoes. Mix well. Let it cook for another minute.
5. Now add the moong daal ( boiled )
6. Add little water, about half cup.
7. Add remaining spices. Salt as per taste.
8. Bring to boil.
9. Garnish with coriander
10. Serve hot with rice or bread.

Ingredients:
2 Cup Jowar Flour
2 Onions
1 tsp Asafoetida
1.5 tsp Turmeric Powder
2 - 3 tsp Red Chili Powder
3/4 Cup Coriander/Cilantro
2-3 tbsp Oil
Water: As required
Salt: As per taste

Recipe:

1. Take jowar flour into large bowl and add all the spices.
2. Now add onions, coriander, oil and salt.
3. Add sufficient amount of water and make soft dough and make small portion out of it.
4. Now take one cotton cloth, soak it into water.
5. Spread it over wooden board. Take one small portion and spread it on cloth by using water to make thalipeeths.
6. Add some oil on pan and put this on it.
7. Cook it from both sides and your dish will be ready.

2 Cup Roasted Sesame Powder
1/2 Cup Roasted Peanut Powder
1 Cup Jaggery

Coconut Flex For decoration

1. Keep your pan on low heat and add clarified butter/ghee to that.
2. Once ghee melts, add jaggery to the pan.
3. Keep it stirring continuously.Once jaggery is melted completely, take it off the heat.
4. Add both powder and mix it properly.

For Outer Cover:
4 tbsp Rice Flour
1 tbsp Chickpea Flour
1 tsp Chili Flakes
Water as required

Recipe:
For Filling:
1. Just mix all of the ingredients together except cheese and grind them together.
2. Now add cheese to the mixture and mix it well.
3. Make small balls of the mixture and keep it aside.

For Outer Cover:
1. Mix all of the ingredients together except water.
2. Now add sufficient amount of water to make watery paste.

For Final Product:
1. dip the balls into rice flour mixture and deep fry it in oil.
2. Fry them till they become golden brown and our dish is ready.

Samosa - Extremely Popular Indian Snack

Samosa. I am sure you want to have one !
Who can deny that Samosa is the most popular Indian snack. Have it with Tea, Chutney, Coffee, some even have it as Chaat or as a filler for a bread bun ! Make them at home, have friends over, watch a movie or a game of cricket. Do share your comments too.

Ingredients:
Half cup of green peas
1/4 teaspoon of lemon juice
4 cloves of garlic, finely chopped
1 1/2 teaspoon of finely chopped ginger
4 green chillies - peppers. Vary the amount per the hotness.
1 teaspoon of cumin seeds
2 big potatoes, boiled and peeled.
1 teaspoon of garam masala
1 teaspoon of coriander powder
1/4 teaspoon of asafoetida ( hing in Hindi )
1/4 teaspoon of turmeric powder
1 teaspoon of jeera powder / cumin powder
3 cups of all purpose flour
Salt to taste
Water to knead the dough.

Dough:
1. Add cumin seeds and salt to the the flour, in mixing bowl.
2. Add 1 1/2 tablespoon of oil.
3. Slowly start kneading the dough and add water. We don't want the dough to be loose. Keep aside for 20 mins.

Filling:
1. Keep pan on medium heat.
2. Add oil.
3. Once oil is hot, add ginger , garlic and cumin seeds.
4. Add green chillies.
5. Add the spices : Asafoetida, Turmeric Powder, Garam Masala, Jeera Powder (Cumin Powder), Coriander Seed Powder. Mix well.
6. Once the masala are cooked, add green peas. Mix Well.
7. Add mashed potatoes.
8. Add Salt to taste.
9. Cook for around 7- 8 mins on medium heat. Keep aside to cool down.
10. Add lemon juice and mix.

Before Deep Frying:
1. Take a small portion of dough. Knead and take a golf ball size dough.
2. Roll it flat in circle.
3. Cut it in half.
4. Apply little water to all the edges.
5. Roll it into a cone, conical shape.
6. Now add a spoon of the potato - peas mixture and seal in the cone.
7. Deep fry in hot oil till golden brown.
8. Serve hot with Chutney or Ketchup

Ingredients:
3 cups of chopped vegetables. ( mix of peas, carrots, beans, broccoli and more )
2 1/2 cups of milk
4 tablespoon of all purpose flour
1 teaspoon of black pepper
4 tablespoon of butter
1 cup of cheese. You can take different blends too.
Salt as per taste

Recipe:
1. Place pan on medium heat.
2. Add butter. Let it melt and then add all purpose flour.
3. Add chopped garlic.
4. Mix it well, keep stirring.
5. In another pan, boil milk.
6. Once the all purpose flour changes the color slightly, add the boiled milk slowly while stirring. This will ensure no lumps are formed.
7. Add black pepper.
8. Note that no salt has been added yet. We will add salt while baking.
9. Preheat the over for 350' F.
10. Layer the veggies and the white sauce that we just prepared, in a buttered pan. Then top it with cheese.
11. Bake for around 35 mins
12. Serve.

1 Cup Sugar
1 Cup Milk Powder
1 Cup Milk
1 Cup Unsalted Butter
2 Cup All Purpose Flour (Maida)
1.5 tsp Baking Powder
1/4 tsp Baking Soda
1 tsp Vanilla Extract
Pinch of Salt
4 Colors to make multi-layer cake.

Recipe:

1. Add butter and sugar together.Beat it together till it is light and fluffy.
2. Now slowly add milk and beat for another 4-5 mins.
3. Add milk powder and mix it well. Beat it for few minutes.
4. Add vanilla extract, baking powder, baking soda. Beat it for another 4-5 minutes.
5. Now add all purpose flour slowly and mix it well.
6. Divide the batter into 4 portions. Add one color to each portion.
7. Pour each portion of batter one by one into greased pan.
8. Bake it for 30-35 mins at 350 Fahrenheit and our cake is ready.

3. Once oil is hot, add mustard seeds, cumin seeds, asafoetida and turmeric powder. Mix it well.
4. Now add curry leaves,red chilies, garlic, mix it well and cover it with lid.Let it cook for few minutes.
5. Now add mixture of chickpea flour,keep stirring it (add some more water if mixture is thick).Cover it with lid and let it cook for 3-4 minutes.
6. Finally add salt and coriander and our dish is ready.
7. Serve it hot with Roti/Rice :)

1 cup of heavy whipping cream
20 gms of milk chocolate
1 tablespoon of salted butter
1 tablespoon of sugar
1 teaspoon of vanilla extract

Recipe:
1. We need to melt the chocolate and the butter. I prefer to do it in the Microwave for around ten seconds to begin, stir and repeat till both butter and chocolate is ready.
2. Keep the melted chocolate and butter aside.
3. Take the whipping cream, add sugar and then whip it for 5-10 minutes, till light and fluffy.
4. Add the vanilla extract to the whipped cream mixture.
5. Add the chocolate and butter mixture.
6. Mix well.
7. Pour it in the glass or a small bowl and refrigerate it for 3-4 hours to set.

4. To check whether the potatoes are cooked, take a spatula and press one of the slice. If it goes through easily, the potatoes are cooked !
5. Now, add the sugar.
6. Still well.
7. Once the sugar melts and caramelizes a little bit, our dish ready !

Ingredients:
4-5 Fried Papad
1 Onions
1 Tomatoes
Shev: For Garnishing
Coriander/Cilantro
Red chili powder
Tamarind-Dates-Jaggery Paste
Yogurt
Note: There is no specific proportion of ingredients in this recipe. Just use the proportion as per your liking.You can also use tortilla instead of papad.

Recipe:
1. Take fried papad on plate.
2. Sprinkle red chili powder on it.
3. Now add onions, followed by tomatoes.
4. Add paste of tamarind-dates-jaggery and yogurt on top of it.
5. Decorate it with shev and coriander and our dish is ready.

Bitter Gourd - Karela Magic Recipe

Karela is one of the highly beneficial vegetable for the body. It is called a boon in Ayurveda but is one of the most difficult to cook due to its bitterness. As I call it, it is a chef's nightmare and any mothers too !


I wanted to share my mom's recipe with you all so that you can benefit by this gift of mother nature !

Ingredients:
2 Karela's / Bitter gourd cut in slices. Ensure that you remove the seeds.
5-6 cloves of garlic.
7-8 dried red chilies.
1 teaspoon of whole black pepper. You can also use the ground powder.
1 1/2 teaspoon of coriander seeds. ( Dhania Seeds in Hindi )
8-10 green chilies. Vary the quantity per the hotness. ( I prefer spicy though )
2 star anise
Half bowl / 1 cup if grated coconut. Use the fresh one if available.
Half cup of soaked yellow peas ( soak for around 30 minutes)

Tempering:
1/4 teaspoon of asafoetida / Hing Powder
1/4 teaspoon of mustard seeds
1/4 teaspoon of turmeric powder

Recipe:
1. Keep pan on medium heat.
2. Add one teaspoon of vegetable oil.
3. Add 1/4 teaspoon of asafoetida/ hing ( you will get it at any Indian Grocery Store )
4. Add 1/4 teaspoon of turmeric powder and mustard seeds.
5. Add the cut Karela / Bitter Gourd. Mix it well.
6. Add sufficient amount of water. Add till the Karela soaks. Do not cover with lid. Let it cook till water evaporates.
7. Now, we will need make the masala.
8. Begin by dry roasting the spices on medium heat. Do not add the soaked yellow peas yet.
9. Lightly roast the spices. Ensure you stir continuously otherwise there is a possibility that the spices may burn or char.
10. Once the aroma of roasted spices leaves the pan, add 3/4 cup of water and grind this mixture to a fine paste.
11. Now add salt ( as per taste ) to the Karela. Mix it well.
12. Add the soaked Yellow Peas.
13. Add the ground masala.
14. Karela Magic Ready ! Garnish it with Coriander. Serve it hot with Roti or Rice.

Benefits:
1. Extremely healthy due to the Karela / Bitter Gourd.
2. Kids will love it too as all the bitterness is masked by the masala.
