Thalipeeth - Maharashtrian Delicacy - Much better than fast food.

A recipe which has been handed down from generations. This multi nutritional dish is not 
only mouth watering but soooo easy to make. I'm sure once you try it... it will be a regular item on you menu. Its much better than any fast food.

Ingredients:
2 Cup Jowar Flour
2 Onions
1 tsp Asafoetida
1.5 tsp Turmeric Powder
2 - 3 tsp Red Chili Powder
3/4 Cup Coriander/Cilantro
2-3 tbsp Oil
Water: As required
Salt: As per taste

Recipe:

1. Take jowar flour into large bowl and add all the spices.
2. Now add onions, coriander, oil and salt.
3. Add sufficient amount of water and make soft dough and make small portion out of it.
4. Now take one cotton cloth, soak it into water.
5. Spread it over wooden board. Take one small portion and spread it on cloth by using water to make thalipeeths.
6. Add some oil on pan and put this on it.
7. Cook it from both sides and your dish will be ready.

Benefits:
1. Very healthy as contains ingredients like jowar flour, onions, coriander.cilantro.
2. East and can be made quickly.

Til Vadi / Sesame Sweet ( Tilachi Vadi ) - Natural Protection for Winter / Cold (TilGul)

Til - Sesame Sweet
This is a traditional Maharashtrian sweet which is prepared using roasted sesame seeds and jaggery. This is eaten during winters as sesame and jaggery help to protect against the harsh cold and offer natural protection.

Ingredients:
2 Cup Roasted Sesame Powder
1/2 Cup Roasted Peanut Powder
1 Cup Jaggery
2 tsp Clarified Butter/Ghee
Coconut Flex For decoration

Recipe:
1. Keep your pan on low heat and add clarified butter/ghee to that.
2. Once ghee melts, add jaggery to the pan.
3. Keep it stirring continuously.Once jaggery is melted completely, take it off the heat.
4. Add both powder and mix it properly.
5. Apply some ghee on plain dish and spread our mixture on it.
6. Now put coconut flex and press it into mixture.
6. Cut the mixture into square pieces and our dish is ready.

Benefits:
1. Popular sweet snack made during Sankranti.
2. Very useful to build immune power against winter.

Ingredients:
3/4 Cup Roasted groundnut powder
4 tsp Clarified butter/Ghee
2 tbsp Jaggery

Recipe:
1. Mix jaggery, roasted ground nut powder and clarified butter together. Grind them for 3-4 minutes.
2. Roll them into small rolls and our dish is ready.

Pithla - A Maharashtrian Delicacy ! Chickpea - Garbanzo Flour Recipe

Pithla will make any Maharashtrian's mouth water. A staple food for many, and delicacy for some, this dish will go with bread, rice or even a bagel ! Have fun making it and enjoy it with the entire family.

Ingredients:
1 Cup Chickpea Flour
4-5 cloves of garlic
3-4 Dried Red Chilies
5-6 Curry Leaves
Water as required
Salt as per taste
Coriander/Cilantro

For Tempering:

2 tbsp Oil
1/2 tsp Mustard Seeds
1/4 tsp Cumin Seeds
1/4 tsp Asafoetida
1/2 tsp Turmeric Powder

Recipe:

1. Mix chickpea flour and sufficient amount of water to make watery paste out of it.
2. Keep your pan on medium heat and add oil to that.
3. Once oil is hot, add mustard seeds, cumin seeds, asafoetida and turmeric powder. Mix it well.
4. Now add curry leaves,red chilies, garlic, mix it well and cover it with lid.Let it cook for few minutes.
5. Now add mixture of chickpea flour,keep stirring it (add some more water if mixture is thick).Cover it with lid and let it cook for 3-4 minutes.
6. Finally add salt and coriander and our dish is ready.
7. Serve it hot with Roti/Rice :)

Kadhi - A Must Try Indian Recipe

Kadhi, the name itself brings back memories of my childhood. The aroma, the taste, no wonder this is a popular Indian dish tried by all and loved by all. 
Do try this quick and easy recipe and do not forget to share your feedback.

Ingredients:
5-6 tbsp Yogurt
1 inch Ginger
2-3 Cloves Of Garlic
2 tsp Chickpea Flour
Salt: As per taste
Water: As required

For Tempering:
2 tsp Cumin Seeds
3-4 Dry Red Chilies
2 tbsp Butter
10-12 Curry Leaves
1/2 tsp Fenugreek Seeds

Recipe:
1. Mix yogurt, ginger, garlic,chickpea flour together and grind them together. Add sufficient amount of water to make a watery yogurt mixture.
2. Keep your pan on medium heat and add yogurt mixture to that.Keep stirring it.
3. Once it starts boiling, switch off the gas and keep it aside.
4. Take other pan for tempering. add butter to that. Once butter melts, add cumin seeds, red chilies, curry leaves,fenugreek seeds and mix it well.
5. Cook it for 2-3 minutes and add the tempering to yogurt mixture.
6. Keep the yogurt on on low heat again and add salt as per taste.
7. Let is cook for few more minutes and our dish is ready.

Potato Rasoti, Potato Cutlets are one of the quick and healthy snacks that you can make with very simple and easy to find ingredients. Its not a recipe of specific region like Indian or Mexican, American etc, and hence you can alter the taste as per your ingredients.But ensure you have potatoes or sweet potatoes as that's what the recipe is about !

Ingredients:
2 boiled potatoes, mashed.
1 teaspoon ginger finely grated.
2-3 teaspoon coriander or cilantro. You can also use parsley.
2-3 green chilies / peppers finely chopped. Alter the quantity as per the hotness.
1 teaspoon of fresh lime juice.
Salt as per taste.

Recipe:
1. Mix all ingredients together in a bowl.
2. Once all the ingredients are mixed, make small balls / patties.
3. Place them on hot grill or you can even put them in hot pan.
4. Drizzle a little bit if vegetable oil or olive oil. You can also use butter ( light butter for less calories :)
5. Once they are golden brown on both sides, remove them on a paper napkin to absorb excess oil.
6. Serve hot with ketchup or chutney. You can also place them in buns and have a quick burger !

This is a famous Maharashtra - India recipe , more popular in Sangli. Rice flakes, coconut, onion, green peppers deliver a bold punch and make you want more. Enjoy this as an evening snack or even as breakfast !! You will love it.

Ingredients:
1.5 Cup Thin Poha               
1/4 Cup Buttermilk
3/4 Cup Grated Coconut
8-10 Green Chilies
2 Onions(Medium)
8-10 Curry Leaves
2 tsp Lemon Juice
2-3 tsp Oil
1/2 tsp Sugar
Salt: as per taste
Coriander/Cilantro:for garnishing

For Tempering:
2 tsp Mustard Seeds
1 tsp Cumin Seeds
1/2 tsp Asafoetida
1 tsp Turmeric Powder

Recipe:
1. Add buttermilk,Sugar, Salt in to the pohe and keep it aside for 5-7 mins.
2. Heat oil in the pan and add Mustard Seeds, Cumin Seeds, Asafoetida, Turmeric Powder and mix it well.
3. Now add curry leaves and green chilies and mix it well.
4. Add onions and cook them till they become transparent.
5. Next step is to add cooked onions followed by coconut and lemon juice to poha. 
6. Mix it well and our dish will be ready.
7. Garnish it with Coriander and serve it.

Kadhai Chicken has always been the favorite of all. Try this authentic recipe and be amazing with the variety of flavors ! 

Ingredients:
2 Chicken Breasts
1 Medium Onion
2 Medium Tomatoes
1 Medium Bell Paper / Capsicum
1 tsp.Ginger Garlic Paste
10 to 12 Mint leaves.
1 tsp.Cumin Powder
1 tsp.Turmeric Powder
1 tsp.Red Chili Powder
1 tsp.Garam Masala
2 tbsp.Vegetable Oil (you can use other type of oil too)
1/2 tsp.Fenugreek leaves

Recipe:
1. Marinating the chicken is the first step. For that cut the chicken breasts into small pieces.  
2. Add ginger-Garlic paste, all the spices and mint leaves. Mix it properly and keep it aside for half an hour.
3. Keep your pan on medium heat and add oil to the pan.  
4. Once oil is hot add onions and let the onions cook till they become transparent.  
5. Now add marinated chicken to the pan and mix it well.  
6. Cover it with lid and let it cook for 5 minutes.  
7. After 5 minutes, add tomatoes and mix it properly. Let it cook for 2 to 3 minutes.  
8. Now add salt as per taste. Mix it well and then add bell paper/capsicum.  
9. Finally add fenugreek leaves and our 'Kadhai Chicken' is ready.

Sabudana ( sago ) is widely used in Maharashtra cuisine and is one of a diverse ingredient. These cutlets are sooo easy to make and rich in flavor. You can have them with yogurt or even by themselves. Do post your comments below. 

Ingredients:
1 Bowl Sabudana/Sago
1/2 Bowl  Roasted Groundnut Powder 
1/4 tsp. Cumin Powder
1 Boiled Potatoes
6 Green Chili
4 tbsp. Coriander/Cilantro
Salt

Recipe:
1. Just add all the ingredients together and kneed the dough by using some water 
2. Once our dough is ready, the next step is make patice/cutlets. 
3. Make small portions of the mixture and make them in any shape as per your liking :) 
4. Next step is to shallow fry them by using Clarified Butter on medium heat. 
5. Once it is cook from both side our 'Sago Sabudana Cutlets' are ready.

Ingredients:
3 Bowl Soaked Sabudana
1.5 Bowl Roasted Ground Nut Powder
5 Tbsp. Clarified Butter / Ghee
2 tsp. Cumin Seed
2 to 3 Green Chilies
1 tsp. Sugar (or as per taste)
1.5 tsp. Salt or as per taste
For garnishing  Coriander / Cilantro and Grated Coconut

Tip for Sabudana:

Just add the water till all sago in bowl gets filled and soak overnight. 

Recipe:

1. Create Sabudana/Sago mixture by adding all the ingredients together except cumin seeds and green chilies . 
2. Once the butter melts, add cumin seeds and green chilies to that. Let it cook for few minutes. 
3. Now add Sabudana/Sago mixture and mix it properly. 
4. Cover it with lid and let the mixture cook for 4-5 minutes and our 'Sabudana Khichadi' will be ready. 
5. Garnish it with coconut, cilantro and serve it hot with lemon wedge and bowl of yogurt.
